Vankaya Pachadi (Eggplant Chutney)

This chutney is my moms recipe,the best combo is with rice and omlet,it also goes well with chapathi too.

Ingredients
Oil-5 tbsp
Egg Plant-1
Onion-1 medium
Salt-as req

Tempering
Garlic-4
Coriander Seeds-1 tbsp
Cummin Seeds-1 tbsp
Urad Dal-1 tsp
Green Chili-5
Chana Dal-1 tsp
Coriander leaves-1/3 cup

Preparation
  • Wash egg plant chop it in to 4 pieces and cook it in 3 tbsp oil until it becomes soft and peel off the skin and keep a side. 
  • Heat 1 tbsp oil add crushed garlic,slit green chili then add all ingredients under tempering and saute until its done.

Method
  • Heat 1 tbsp oil in a pan add chopped onions and saute.
  • Now add mashed egg plant,tempering to blender and blend it coarsely and add this to onion and mix well until you see chutney texture.Serve this with combo of rice and omlet.
