Carrot Cake

First of all i would like to say that i m poor at baking,but this cake made me to do baking,as it is super yummy when i ate this cake for the first time,which prepared by mary( my husband ,colleague wife) ,when they visited my home,they bought me this cake which was yummylicious.She mail'd the recipe which i m adding in my blog posts. I would thank her for this super yummy cake which made me to bake this cake again n again.Very easy n prepared in no time.


Ingredients
Eggs-4
Vegetable Oil-1 1/2cups
Sugar-2cups
Grated Raw Carrot-2cups
Crushed pine apple;juice-1 81/2can
Chopped Walnuts-1cup
Raisins-1cup
Grated Coconut-1cup
Flour-2cups
Baking Powder-2tsps
Baking Soda-1 1/2tsps
Salt-1tsps
Cinnamon-2tsps
Ginger-1/2tsp




Preparation
Beat eggs lightly until smooth,then add oil n sugar n mix well.Now add carrots,pine apple,nuts,raisins and coconut.Mix until all ingredients are moistened.Sift together flour,baking powder,baking soda,salt,cinnamon n ginger.Now add these dry mixture to other ingredients n keep a side.

Method
Pour these mixture in to a greased n floured pans or spray cup cake liners with cooking spray.
3-9 lNch pan-BAKE 35 t0 40 minute
Regular Cupcakes-Bake 26 minutes-makes-36
Jumbo Cupcakes-Bake 32minutes-makes-18
Make sure oven  rack is well above heat source in the oven so the bottoms wont burn.Bake at 350 degree F until cake springs back in the middle.
